Although Blanca owns the farm, she lives in another town so Luis Portilla manages it along with his own farm. Their farms are located adjacent to each other and though processed the same each have unique character. It has a single varietal which consiss of Castillo and the coffee is fully washed. It is fermented for 14 hours and dried afterwards for about 14 days on a raised bed.
Blanca Romo Romo is incredibly bright and complex. The flavour begins with pronounced apricot sweetness with a smooth white wine body and lime acidity.
