High quality red cherries are selectively handpicked based on density, absence of defects and other valuable coffee determinants.
At the mill, extra hand sorting is executed to maintain quality of green by understanding and sorting based on the degree or ripening of the cherries.
It has been fermented for 24- 72 hours with soaking time of 6 hours. It is dried on raised beds and the duration ranges between 10-15 days.
This coffee is a fresh crop that has landed in this July. It act as a great dessert coffee as it has incredibly delicate tea like finish with honey sweetness.
